 i suggest vegetable shorten for butter and tofu for eggs

You can use apple sauce in place of the butter (1:1 ratio). Also, instead of using eggs, just replace any white sugar in the recipe with an equal measurement of brown sugar, and add 1/2 to 1 tsp more of baking soda.
